Pork Sausage Gravy

1 tablespoon unsalted butter

1/2 pound breakfast sausage, crumbled

3 tablespoons all-purpose flour

1/4 teaspoon kosher salt

1/4 teaspoon black pepper

Pinch of cayenne pepper

1 3/4 cups milk

Assembly

1 (16-ounce) can refrigerated large biscuits (8 biscuits)

1 pound store-bought hash brown potatoes, fresh or frozen

1. Make the pork sausage gravy: In a medium skillet, melt the butter. Add the crumbled sausage and cook, stirring frequently, until no longer pink in the center.

2. Sprinkle the sausage with the flour, salt, black pepper, and cayenne. Slowly simmer until the flour has been absorbed by the cooking liquid, about a minute.

3. Using a wooden spoon, gradually stir in the milk, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and let it cook until thickened, stirring frequently. Taste the gravy and adjust the seasonings if desired and keep it warm.

4. Assemble the dish: Bake the biscuits according to the package directions.

5. Follow the instructions for making four 4-ounce servings of the hash brown potatoes.

6. For each serving, split 2 of the baked biscuits and arrange them on a dish split side up. Spoon some of the sausage gravy over each of the servings and add a portion of the hash brown potatoes to the plate. Serve hot.
